But some people, like my mother, don\u2019t <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">app<\/a>reciate this gift. (This ended up working out well for me as a youth, as I could steal all the skin from the Costco rotisserie chicken with impunity.) But my fellow skin fans (who<!-- -->\u00a0I almost referred to as \u201cskinheads\u201d just now) know what\u2019s good, and these are the people whose enjoyment I want to maximize. <\/p>\n<div class=\"bxm4mm-2 hKBnez js_video-sticky__top-limit\"><\/div>\n<div class=\"bxm4mm-3 eCMXYG js_video-sticky__bottom-limit\"><\/div>\n<p class=\"sc-77igqf-0 bOfvBY\">If you\u2019re cooking a whole turkey, there are several well-known strategies you can use to crisp the skin while the turkey cooks. You can use the <span><a rel=\"nofollow noopener noreferrer\" target=\"_blank\" class=\"sc-1out364-0 hMndXN sc-145m8ut-0 fBlGIv js_link\" data-ga='[[\"Embedded Url\",\"External link\",\"https:\/\/www.seriouseats.com\/2016\/10\/how-to-get-crispier-chicken-turkey-poultry-skin-with-baking-powder.html\",{\"metric25\":1}]]' href=\"https:\/\/www.seriouseats.com\/2016\/10\/how-to-get-crispier-chicken-turkey-poultry-skin-with-baking-powder.html\">Serious Eats baking soda trick<\/a><\/span> (sprinkle one part baking soda to three parts kosher salt all over the bird, then let it rest uncovered in the fridge for 24 hours before roasting), or you could enlist the help of your <span><a rel=\"nofollow noopener noreferrer\" target=\"_blank\" class=\"sc-1out364-0 hMndXN sc-145m8ut-0 fBlGIv js_link\" data-ga='[[\"Embedded Url\",\"Internal link\",\"https:\/\/lifehacker.com\/use-a-hair-dryer-to-crisp-chicken-skin-1824061388\",{\"metric25\":1}]]' href=\"https:\/\/lifehacker.com\/use-a-hair-dryer-to-crisp-chicken-skin-1824061388\">hair dryer<\/a><\/span>.<\/p>\n<div id=\"\" class=\"bxm4mm-11 gamHXh js_ad-mobile-dynamic  js_ad-dynamic ad-mobile-dynamic movable-ad\">\n<div class=\"bxm4mm-8 bxm4mm-9 dQlBGJ\"><\/div>\n<div class=\"bxm4mm-12 iqioLK ad-unit ad-mobile\">\n<div is=\"bulbs-dfp\" class=\"ad-container dfp dfp-slot-MOBILE_IN_POST ad-mobile\" data-ad-unit=\"MOBILE_IN_POST\" data-targeting='{\"pos\":\"mobile_inpost\"}'><\/div>\n<div class=\"bt-wrapper\"><span data-uid=\"5d260804c9-384\" class=\"bt-uid-tg\" style=\"display:none !important;text-align:center\" data-css-selector=\"ad-container.ad-mobile\"><\/span><\/div>\n<\/div>\n<div class=\"bxm4mm-8 bxm4mm-10 kbXecJ\"><\/div>\n<\/div>\n<p class=\"sc-77igqf-0 bOfvBY\">But, even if you take those steps, there are going to be spots on the turkey that just don\u2019t get the amount of heat and air flow required to render it crispy. (Putting the bird on a wire rack helps, but the bird\u2019s back will never get as crisp as its breast.)<\/p>\n<p class=\"sc-77igqf-0 bOfvBY\">These sub-par skin regions usually get tossed, or boiled with the rest of the carcass for stock, but this\u2014to me\u2014is wasteful. That skin deserves the glory of crispness, and you can help it get there. The plan? Wait until your family is asleep, remove any sad, flabby, leftover skin from the turkey, then fry it into a crisp. You can use the procedure outlined in <span>this blog<\/span> on how to fry leftover chicken skin, just change the word \u201cchicken\u201d to \u201cturkey\u201d:<\/p>\n<blockquote data-type=\"BlockQuote\" class=\"sc-8hxd3p-0 ehyFRB\">\n<p class=\"sc-77igqf-0 bOfvBY\">Just (gently) peel any skin off of your cooked chicken and place the pieces in a cold nonstick pan. Set the pan on a burner, turn the heat to medium, and let the pieces cook until they are golden and crispy, flipping once to get both sides (chopsticks work best for this). Transfer to paper towels, salt (if needed) and enjoy in sandwiches or salads, sprinkled on top of pasta or all on their own.<\/p>\n<\/blockquote>\n<div class=\"bxm4mm-19 gvawPI connatix-container\"><script id=\"701055c47e5f49fc872a294b2cb3e6a3\">\n            cnxps.cmd.push(function () {\n                cnxps({\n                playerId: '5de06420-6a66-4898-8a57-ca65c11a0aa4'\n                , customParam1: \"not-lazy-loaded\"\n                }).render('701055c47e5f49fc872a294b2cb3e6a3');\n            });\n        <\/script><\/div>\n<p class=\"sc-77igqf-0 bOfvBY\">Then there are turkey preparations that require you to remove the skin entirely <em>before<\/em> cooking, such as the roulade. The thought may initially send shivers of skin-enthusiast horror down your spine, but this kind of thing actually offers a tremendous opportunity. With the skin removed pre-roast, you are free to turn the entire thing into a huge, glorious cracklin\u2019! Happy holidays, indeed!<\/p>\n<p class=\"sc-77igqf-0 bOfvBY\">All you have to do is lay the (generously seasoned) piece of skin flat on a parchment-lined baking sheet, place another piece of parchment on top, and set something heavy (like a pan, or a baking sheet with one or more <span>kitchen bricks<\/span>) on top of the upper layer of parchment. Pop the whole thing in 375-degree oven for 30-45 minutes. Once it\u2019s a deep, sultry, golden brown, remove it from the oven and let it dry on a cooling rack where it will crisp up further.
