Cuomo\u2019s ban on indoor dining took effect at restaurants citywide Monday \u2014 a severe clampdown that many restaurateurs worry could threaten their survival for good.\u00a0<\/p>\n<p>Meanwhile, Carbone was busy weatherproofing its new dining room on the curb outside its restaurant at 181 Thompson St. in Greenwich Village. To regulars, the structure taking shape Monday afternoon already looked familiar: black-and-white, penny-mosaic tiles on the floor, pressed-tin ceilings above, and a weather-resistant version of its luxe burgundy velvet curtains to keep diners cozy.\u00a0<\/p>\n<p>\u201cIt\u2019s basically like being inside Carbone\u2019s, but outside,\u201d Carbone co-founder Jeff Zalaznick told Side Dish.\u00a0<\/p>\n<p>A Michelin-starred red-sauce joint known for its retro style and stiff prices, Carbone is where <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/pagesix.com\/2020\/02\/27\/carbone-reached-new-heights-of-celebrity-density-wednesday\">George and Amal Clooney<\/a> were turned away when they showed up without a reservation. And it\u2019s where police got called in when patrons clogged the sidewalk waiting for their takeout orders at the start of the pandemic.\u00a0<\/p>\n<p>As it devised an outdoor space to ride out the winter, it was important that Carbone get the outside look right, Zalaznick said.\u00a0<\/p>\n<p>To make it h<a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">app<\/a>en, the restaurant turned to FullStack Modular, a Brooklyn-based manufacturer of modular buildings. Full Stack is most famous for creating the tallest modular residential building in New York \u2014 a 32-story tower at 461 Dean St. in Brooklyn that\u2019s made of prefabricated units stacked up like Legos.\u00a0<\/p>\n<p>Lately, the company has made a <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/watch-movies-tv-seriess\/\" data-internallinksmanager029f6b8e52c=\"8\" title=\"Watch Movies &amp; TV Series\" target=\"_blank\" rel=\"noopener\">series<\/a> of \u201cpandemic pivots\u201d that also have included building isolation modules for health-care workers. Carbone is the latest example, says Full Stack Modular founder Roger Krulak.\u00a0<\/p>\n<p>\u201cWe worked closely with Carbone, and completely customized the space,\u201d Krulak said. \u201cWe used the same tiles from the restaurant on the floor, the same tin ceiling, and the same paint on the walls \u2014 Carbone cobalt blue.\u201d\u00a0<\/p>\n<p>The modules cost between $75,000 to $100,000 a pop. Carbone owner Major Food Group, which installed a similar module at its nearby bagel-and-smoked-fish venue Sadelle\u2019s, has partnered with American Express and Resy to bankroll them. Two more are planned this week for other Major Food eateries.\u00a0<\/p>\n<p>The units are made of steel and covered in plywood at Krulak\u2019s 85,000-square-foot factory at the Brooklyn Navy Yard. They take two weeks to build and a day to install.\u00a0<\/p>\n<p><!--If the slideshow is embedded in another post type add the inline wrapper --><\/p>\n<p>Carbone opted for an eight-foot-by-45-foot version with plans to seat 24 diners at a time alongside tables on the sidewalk that will seat another 16 when weather permits.\u00a0<\/p>\n<p>FullStack says its modules are far warmer than the shanty-style structures built directly over sidewalks and roads. While each has four sides, the barn doors are open to the sidewalk so half the space is always open per city regulations, Krulak said.\u00a0<\/p>\n<p>The only deterrent is the price, but upscale restaurants like Carbone can charge upwards of $100 per guest.\u00a0<\/p>\n<p>\u201cIf there are two or three seatings a night, six days a week, it adds up,\u201d he said. \u201cIt could take three weeks to turn a profit, although if you are only serving sandwiches it will take longer.\u201d\u00a0<\/p>\n<p>Mayor de Blasio has warned restaurants that if there are snow days, they will have to remove their outdoor structures, and many restaurants are panicking \u2014 but not Carbone.\u00a0<\/p>\n<p>\u201cLet it snow.
