Big App<\/a>le restaurants can only serve half their pre-pandemic indoor capacity \u2014 and yet they still don\u2019t have enough help to make it work.<\/p>\n

Eateries are getting crushed by a shortage of workers both in kitchens and on the floor despite sky high unemployment and a growing vaccination effort. It\u2019s part of the national hiring crisis in many industries, which The Post\u2019s Lisa Fickenscher reported this week.<\/p>\n

\u201cIt\u2019s\u00a0 as bad as I\u2019ve ever seen in my 17 years in New York,\u201d said Bernard Collin, a partner in the Upper East Side\u2019s Orsay, La Goulue and Bar Italia. He blamed much of the labor shortfall on \u201cgovernment assistance where people would rather stay home and pocket their cash.\u201d<\/p>\n

Those out of work can receive $805 a week between New York State Unemployment Benefits and the Federal Pandemic Unemployment Compensation.<\/p>\n

The Restaurant Group owner Jeremy Wladis, who oversees new Hachi Maki, Good Enough to Eat and Harvest Kitchen, echoed, \u201cNobody wants to leave their couch. The American public has gotten so used to doing nothing.\u201d<\/p>\n

Others blame the difficulty in hiring on\u00a0lingering COVID-19 fears and last year\u2019s exodus from town of employees who previously worked in restaurants to support their now-paused show business careers.<\/p>\n

Stephen Starr, who owns nine Manhattan places including giant Buddakan and Clocktower, said, \u201cWe had people leave for places like Lansing, Michigan. Our chef at Electric Lemon [at Hudson Yards] moved to Milwaukee, where his wife\u2019s family is.\u201d<\/p>\n

Nobody\u2019s more aware of the problem than Rick Camac, owner of Tribeca\u2019s Kitchen on Church Street \u2013 and also the dean of restaurant and hospitality management at the Institute for Culinary Education.<\/p>\n

The situation \u201cis killing us,\u201d he said. He had to close Tribeca\u2019s Kitchen on Mondays and Tuesdays because \u201cwe can\u2019t find enough people to fill a seven-day week.\u201d<\/p>\n

Thanks to his longtime involvement in restaurants and his educator\u2019s role, \u201cI\u2019m extremely networked in the business,\u201d he said. But when he recently trolled for a general<\/a> manager, using his vast contacts to reach out to 250 people, \u201cWe got back zero responses,\u201d he said.<\/p>\n

Unable to find a suitable host for the three-level eatery, he\u2019s had to place a top manager to man the reception stand \u2013 \u201cbut then he can\u2019t oversee our three floors,\u201d Camac said.<\/p>\n

Mermaid Inn owner Danny Abrams reopened his fish place on Amsterdam Avenue, but due to \u201ctrouble finding servers, cooks and bussers,\u201d he\u2019s serving only 70 people outside at a time. \u201cWe could easily do 40 more,\u201d\u00a0 he said, but there\u2019s not enough help.<\/p>\n

He\u2019d like to serve all his legally permissible seats indoors and out, but he\u2019s short five kitchen staff, two dishwashers, seven servers, a bartender and three bussers.<\/p>\n

A looming other problem: \u00a0\u201cWe plan to reopen three other Mermaids in the next month and a half but I don\u2019t know how we\u2019re going to do it.\u201d<\/p>\n

Orsay\u2019s\u00a0Collin\u00a0said, \u201cWe tried to hire on every possible platform \u2013 restaurant job sites, Facebook<\/a>, whatever. People call, they make appointments \u2013 and then don\u2019t show up. We\u2019ve even thought about offering signing bonuses\u201d to lure employees.<\/p>\n

But mega-operator Starr beat him to it.<\/p>\n

Without enough staff, \u201cOur people are working like crazy, working tons of overtime. Eventually there will be consequences. People will burn out, people will quit.<\/p>\n

\u201cSo we try clever ways to entice people\u201d to sign on. We\u2019re giving $300 signing bonuses at some places and we may have to expand it.\u201d\n <\/p><\/div>\n
