It\u2019s part of the national hiring crisis in many industries, which The Post\u2019s Lisa Fickenscher reported this week.<\/p>\n<p>\u201cIt\u2019s\u00a0 as bad as I\u2019ve ever seen in my 17 years in New York,\u201d said Bernard Collin, a partner in the Upper East Side\u2019s Orsay, La Goulue and Bar Italia. He blamed much of the labor shortfall on \u201cgovernment assistance where people would rather stay home and pocket their cash.\u201d<\/p>\n<p>Those out of work can receive $805 a week between New York State Unemployment Benefits and the Federal Pandemic Unemployment Compensation.<\/p>\n<p>The Restaurant Group owner Jeremy Wladis, who oversees new Hachi Maki, Good Enough to Eat and Harvest Kitchen, echoed, \u201cNobody wants to leave their couch. Our chef at Electric Lemon [at Hudson Yards] moved to Milwaukee, where his wife\u2019s family is.\u201d<\/p>\n<p>Nobody\u2019s more aware of the problem than Rick Camac, owner of Tribeca\u2019s Kitchen on Church Street \u2013 and also the dean of restaurant and hospitality management at the Institute for Culinary Education.<\/p>\n<p>The situation \u201cis killing us,\u201d he said. He had to close Tribeca\u2019s Kitchen on Mondays and Tuesdays because \u201cwe can\u2019t find enough people to fill a seven-day week.\u201d<\/p>\n<p>Thanks to his longtime involvement in restaurants and his educator\u2019s role, \u201cI\u2019m extremely networked in the business,\u201d he said. People call, they make appointments \u2013 and then don\u2019t show up. We\u2019ve even thought about offering signing bonuses\u201d to lure employees.<\/p>\n<p>But mega-operator Starr beat him to it.<\/p>\n<p>Without enough staff, \u201cOur people are working like crazy, working tons of overtime. Eventually there will be consequences. People will burn out, people will quit.<\/p>\n<p>\u201cSo we try clever ways to entice people\u201d to sign on.
