Goodbye, our favorite lavender and honey-roasted duck and mushroom butter-poached lobster!\u00a0<\/p>\n<p>It\u2019s an epicurean upheaval by chef\/owner Daniel Humm, who\u2019s presided over the three-Michelin-starred eatery\u2019s kitchen since 2006. EMP customers were used to meaty masterpieces from land and sea as part of a $335 prix fixe tasting menu.\u00a0<\/p>\n<p>The new menu will also cost $335 (including tip) for 12 courses, compared with eight to 10 pre-pandemic. It will be 100 percent \u201cplant-based\u201d with \u201cvegetables, both from the earth and the sea, as well as fruits, legumes, fungi, grains, and so much more,\u201d Humm wrote to customers on Monday.\u00a0<\/p>\n<p>\u201cPlant-based\u201d means no milk, cream or cheese, either \u2014 dairy products which chefs often use on merely vegetarian menus to make dishes taste and feel more like \u2014 take a guess \u2014 meat and fish. (The only exception at EMP will be milk and honey available with coffee and tea).\u00a0<\/p>\n<p>Is EMP\u2019s new animal-averse <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">app<\/a>roach woke? It redesigned its dining room twice. It went from \u00e0 la carte to prix fixe. We have a farm upstate in Bennington, NY, to grow our special vegetables. We work with a lab. It\u2019s also extremely labor-intensive.\u201d\u00a0<\/p>\n<p>Humm\u2019s fellow three-Michelin star toque, seafood-centric Le Bernardin\u2019s Eric Ripert, agreed, \u201cA pound of morel mushrooms costs $40. White asparagus, truffles and exotic vegetables can be similar in price to food at places that don\u2019t serve only vegetables.\u201d\u00a0<\/p>\n<p>Ripert wished Humm well, saying, \u201cI believe the EMP concept will be successful.
