{"id":309834,"date":"2021-07-28T02:39:55","date_gmt":"2021-07-27T23:39:55","guid":{"rendered":"https:\/\/en.buradabiliyorum.com\/why-celeb-chef-david-burke-hired-his-landscaper-housekeeper-for-kitchen-gigs\/"},"modified":"2021-07-28T02:39:55","modified_gmt":"2021-07-27T23:39:55","slug":"why-celeb-chef-david-burke-hired-his-landscaper-housekeeper-for-kitchen-gigs","status":"publish","type":"post","link":"https:\/\/buradabiliyorum.com\/en\/why-celeb-chef-david-burke-hired-his-landscaper-housekeeper-for-kitchen-gigs\/","title":{"rendered":"#Why celeb chef David Burke hired his landscaper, housekeeper for kitchen gigs"},"content":{"rendered":"<p>&#8220;<strong>#Why celeb chef David Burke hired his landscaper, housekeeper for kitchen gigs<\/strong>&#8221;<\/p>\n<div>\n<p>One of the most thankless jobs has been made worse by the labor shortage \u2014 and even celebrity chefs are twisting themselves in a knot to hire and retain dishwashers. <\/p>\n<p>David Burke, <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/pagesix.com\/2021\/05\/02\/food-network-star-ree-drummonds-daughter-alex-gets-married\/?_ga=2.189311400.2001671404.1627231536-604849001.1624902287\">the Food Network<\/a> star behind 18 restaurants, including the David Burke Tavern in Manhattan, says he has been so desperate for dishwashers and other kitchen staff that he recently asked his personal landscaper and former housekeeper to work in one of his restaurants.\u00a0<\/p>\n<p>After they agreed to don aprons in exchange for beefed up salaries, the Iron Chef America contestant was finally well-staffed enough to open his Rumson, NJ, steakhouse and sushi bar Red Horse Tavern in March.<\/p>\n<p>But it\u2019s been anything but smooth sailing. For every person Burke manages to hire, another one quits on him. And the constant churn exacerbates the difficulty of the job for everyone else \u2014 creating a vicious cycle of staffing woes. <\/p>\n<p>The landscaper-turned-dishwasher, Tony Edele, found himself clocking 90-hour weeks at first \u2014 turning up seven days a week, even on Mondays when the place is closed, just to clean up, Burke said.  <\/p>\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"1024\" height=\"683\" alt=\"David Burke Tavern interior\" class=\"wp-image-18940446 lazyload\" srcset=\"https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/07\/sized-burke-tavern.jpg?quality=90&amp;strip=all&amp;w=300 300w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/07\/sized-burke-tavern.jpg?quality=90&amp;strip=all&amp;w=640 640w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/07\/sized-burke-tavern.jpg?quality=90&amp;strip=all&amp;w=1280 1280w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/07\/sized-burke-tavern.jpg?quality=90&amp;strip=all&amp;w=1024 1024w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/07\/sized-burke-tavern.jpg?quality=90&amp;strip=all&amp;w=2000 2000w\" data-sizes=\"(max-width: 640px) 100vw, 1024px\"\/><figcaption>The David Burke Tavern owner would like to create a scholarship program to lure restaurant help.<\/figcaption><figcaption><span class=\"credit\">David Burke Tavern<\/span><\/figcaption><\/figure>\n<p>The hours have been so grueling and tensions so high that Edele has walked off the job more than once, Burke said. \u201cWe give him a day to cool off and [he] comes back,\u201d said Burke, who praised Edele as \u201ca hard worker.\u201d <\/p>\n<p>While many people \u2014 including Burke \u2014  blame beefed up pandemic unemployment benefits for the restaurant labor shortage, the truth is that\u00a0it can be hard to convince people to labor in a sweaty kitchen for long hours, on weekends and holidays no less, for relatively low pay. The nationwide labor shortage has helped boost pay somewhat, but it hasn\u2019t resulted in the job getting any easier. <\/p>\n<p>As Burke himself acknowledges: \u201c[Dishwashing\u2019s] not a glorious job and it\u2019s steaming hot,\u201d<\/p>\n<p>Other unusual tactics Burke has taken to hire dishwashers include reaching out to maid services and day laborers \u2014 to no avail. <\/p>\n<p>As soon as the day laborers learned they would be washing dishes, they said: \u201cNo, no kitchen work,\u201d Burke said. They <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/trip-and-travel\/\" data-internallinksmanager029f6b8e52c=\"10\" title=\"Trip &amp; Travel\" target=\"_blank\" rel=\"noopener\">travel<\/a> to jobs together or rely on public transportation, which can be spotty at night.<\/p>\n<p>\u201cThey don\u2019t like working at night and getting home at midnight,\u201d Burke said. <\/p>\n<p>Edele, a mechanical engineer who lost his job during the pandemic, told The Post that he agreed to the dishwasher gig because he stood to earn more, at $15 an hour plus overtime, which has led to compensation of more than $20 an hour overall. <\/p>\n<p>He also felt a sense of loyalty to Burke. \u201cI know David and he couldn\u2019t get anyone to do it,\u201d Edele told The Post.<\/p>\n<p>But it it hasn\u2019t been easy, Edele admitted. <\/p>\n<p>\u201cEveryone categorizes dishwashing as a break-your-ass job, and it is,\u201d Edele told The Post. \u201cIt\u2019s nonstop work, cleaning the floor and maintaining the entire kitchen. And one of his sous chefs quit after a building trades company offered to train him to work as a generator technician in Connecticut.<\/p>\n<p>The sous chef, John O\u2019Neil, explained his decision this way in an e-mail to The Post: \u201cI had been in the restaurant business for over 20 years as it was just a passion of mine. It also requires its culinary students to earn college credit by working as cooks, bartenders and servers \u2014 not dishwashers, Michelle Zuppe, chair of the hospitality program, told The Post.<\/p>\n<p>Zuppe said Burke wasn\u2019t the only desperate restaurateur to reach out to her as summer <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">app<\/a>roached and Jersey Shore restaurants scrambled to staff up. In one week in May alone, Zuppe got 72 e-mails from restaurants looking to hire her students, she said. <\/p>\n<p>Burke still hopes to establish a scholarship program at Brookdale, \u201cso we build our own farm team.\u201d<\/p>\n<p>And while he\u2019s managed to beef up staff somewhat in recent weeks, allowing Edele to lower his weekly hours to 50 from 90, he\u2019s still scouting for staff. <\/p>\n<p>\u201cWe are taking any able-bodied person we can get and training them,\u201d Burke said. \u201cI\u2019ll take an Uber driver.
