Most high-end Big App<\/a>le eatery operators cheered Mayor de Blasio\u2019s must-vaxx rules for customers and employees, saying it would encourage more people to dine out and feel safe. But there were concerns about enforcement, and not\u00a0everyone was on board with the idea.<\/p>\n

Le Bernardin chef and owner Eric Ripert, who like Danny Meyer\u00a0 announced a must-vaxx rule even before the mayor\u2019s announcement, chuckled, \u201cSome people are trashing us on social media<\/a>\u201d \u2014 as in an Instagram comment, \u201cLet the dictatorship begin.\u201d But \u201cour clientele wants it,\u201d the three-Michelin-star toque said. \u201cPeople want their lives back. For restaurants, Broadway and clubs, every one whom we contacted said it\u2019s great.\u201d<\/p>\n

Ripert said he\u2019s starting the vaccine policy immediately rather than wait until the city\u2019s official enforcement date of Sept. 13. \u201cWe called every current reservation-holder and not one objected,\u201d he said. \u00a0<\/p>\n

Michael Lomonaco, chef and owner of premier steakhouse Porter House Bar & Grill, enthused that the new rule \u201cwill encourage more people to dine out and feel safe and encourage restaurant employees to return to work.\u201d<\/p>\n

An added bonus: His few employees who aren\u2019t yet vaccinated will likely get the shots, since \u201cnow, it\u2019s not a possibility for them to go to another restaurant\u201d as the rule applies everywhere. However, Jeffrey Bank, CEO of jumbo spots Carmine\u2019s and Virgil\u2019s, cautioned that if workers left, they\u2019d have to be replaced \u201ccarefully. We still need to\u00a0understand the legality around religious exemptions.\u201d<\/p>\n

Mega-owner Stephen Starr, who has thousands of seats at Upland, Buddakan, Pastis and other Manhattan spots, predicted mandatory shots \u201cwill actually help our numbers.\u201d In regard to enforcement, \u201cAt the very least our hosts and hostesses will card everyone, and we\u2019re hoping that technology<\/a> will make it a little easier.\u201d<\/p>\n

Enforcing the rule was on some other minds as well. Katz\u2019s Deli owner Jake Dell said of the landmark eatery\u2019s employees who hand\u00a0tickets to arriving customers, \u201cIt may be an added responsibility for our door staff team, but we are waiting for more guidance from the city to see what we need to do.\u201d<\/p>\n

\u201cWe don\u2019t know if it will bring more customers but we want to be safe,\u201d he said.
But one vocal outlier, Stratis Morfogen, owner of three giant Brooklyn Chop House locations in Manhattan, ripped the shots rule as\u00a0 \u201canother blow to a recovering industry that can\u2019t staff up, faces inflated food costs, is dealing with supply-side constraints pushing up distribution costs \u2014 now, vaccination cards?\u201d<\/p>\n

Weary from so many rule changes over 16 months, Michele Gaton, owner of Extra Virgin in the East Village, said, \u201cI\u2019m running out of gas\u201d to cope with them. \u201cBut we\u2019re hopeful this will remain the status quo. No one wants to go back to isolation, and the new mandate just encourages people to get vaccinated to enjoy these experiences together,\u201d she said.\u00a0 \u00a0<\/p>\n

At Cantina Rooftop, one of the few places where customers\u2019 temperatures are still taken, owner\u00a0Pedro Zamora was so glad for the new rules, he said he\u2019s trying to get the city to send vaccine trucks to his two places to deliver shots.<\/p>\n

And although Jeff Banks thought the policy will help \u201clong-term, the short term will be a disaster. It was extremely disappointing that the mayor didn\u2019t follow up with a public plea to the federal government to refill the restaurant revitalization fund. Instead, he followed up with \u2018inspections and enforcements\u2019 \u2014 typical education-through-fines New York City mentality.\u201d<\/p>\n<\/p><\/div>\n
