He has only raised dishes by $10: Beef carpaccio with truffles went up from $59 to $69 while braised beef cheeks with truffles increased from $119 to $129.<\/p>\n<p>\u201cWhen people order truffles, they tend to order more expensive wines, so it makes up for what I might lose on the truffles,\u201d he said.<\/p>\n<p>Not all restaurants are opting to take the upfront hit. At 15 East @ Tocqueville, chef and owner Marco Moreira upped his eggs with five grams of white truffles from $175 to $275.<\/p>\n<p>Tanya Bastianich, a partner at Babbo, says the famed Italian eatery is taking as gracious an <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">app<\/a>roach as it can. This year, Babbo will stick to its usual truffle budget of $75,000, but will get a smaller haul for its money. On Nov. 18, it will go forward with its usual $1000-per-person truffle dinner with tax and tip extra\u00a0\u2014 and expect forty covers. That\u2019s in addition to the usual seasonal offerings of a la carte shavings on dishes.<\/p>\n<p>\u201cWe don\u2019t pass along the price surge to the guest,\u201d Bastianich said. \u201cIf we did, fewer guests would enjoy them, and that is not what we are about.\u201d<\/p>\n<p>Babbo\u2019s dinner was canceled last year because of COVID, she adds, and the restaurant didn\u2019t want to cancel again this year because of high prices and scarcity.<\/p>\n<p>This year\u2019s truffle shortage has mainly been caused by the weather \u2014 but there are other factors too.<\/p>\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" loading=\"lazy\" width=\"1024\" height=\"682\" src=\"https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/10\/sized-Tagliatelle-with-white-truffles-photo-credit-Riccardo-Piazza.jpg?quality=90&amp;strip=all&amp;w=1024\" alt=\"Tagliatelle with white truffles.\" class=\"wp-image-19920304\" srcset=\"https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/10\/sized-Tagliatelle-with-white-truffles-photo-credit-Riccardo-Piazza.jpg?quality=90&amp;strip=all&amp;w=1535 1536w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/10\/sized-Tagliatelle-with-white-truffles-photo-credit-Riccardo-Piazza.jpg?quality=90&amp;strip=all 1024w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2021\/10\/sized-Tagliatelle-with-white-truffles-photo-credit-Riccardo-Piazza.jpg?quality=90&amp;strip=all&amp;w=512 512w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\"\/><figcaption>Tagliatelle with white truffles at Lucciola.<\/figcaption><figcaption><span class=\"credit\">Riccardo Piazza<\/span><\/figcaption><\/figure>\n<p>\u201cThis summer was hot and dry, with no rain in May, June and July,\u201d Giordano said. \u201cThere was no water, so the truffles weren\u2019t growing and the quality wasn\u2019t great.\u201d<\/p>\n<p>\u201cBefore, only foodies knew about truffles,\u201d Giordano added. \u201cBut more people are <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/trip-and-travel\/\" data-internallinksmanager029f6b8e52c=\"10\" title=\"Trip &amp; Travel\" target=\"_blank\" rel=\"noopener\">travel<\/a>ing now, and thanks to the internet, there are new markets \u2014 from South America to more cities in the United States.\u201d<\/p>\n<p>There\u2019s an additional factor: local wineries in Italy are expanding, which means there is less space for truffles to grow. That might make future truffle scarcities the norm.<\/p>\n<p>\u201cThe top quality truffles are always sold out. And they need to taste right. When there isn\u2019t enough rain they can lose their flavor.\u201d<\/p>\n<p>Ruggeri said he\u2019ll only be serving truffles in Soho this year.
