In 2017, EMP took the No. 1 spot on the \u201cWorld\u2019s 50 Best Restaurants\u201d list. It was the crown jewel in a rapidly expanding hospitality company, Make It Nice, that also included the buzzing NoMad and party-hard pop-ups in the Hamptons and Aspen. But, in 2019, Humm and Guidara abruptly parted ways. She\u2019s \u201callowed me to see myself more clearly, and I get to be more myself by knowing her,\u201d <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/www.vanityfair.com\/style\/2020\/02\/daniel-humm-turns-the-tables-on-fine-dining?utm_social-type=owned&amp;utm_brand=vf&amp;utm_source=twitter&amp;mbid=social_twitter&amp;utm_medium=social\">Humm told Vanity Fair of their relationship<\/a>. \u201cShe inspires me every day.\u201d\u00a0<\/p>\n<p>Perhaps it was her influence that led to a shocking announcement in spring 2021: Humm would be reopening the restaurant with a fully vegan menu. \u201cThe current food system is simply not sustainable,\u201d<a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/www.nytimes.com\/2021\/05\/03\/dining\/eleven-madison-park-vegan-menu.html\">he told the New York Times<\/a>. Last October, EMP\u2019s vegan menu received a <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/www.nytimes.com\/2021\/09\/28\/dining\/eleven-madison-park-restaurant-review-plant-based.html\">scathing 0-star review<\/a> in the New York Times.\u00a0The review also revealed a tasteless hypocrisy: Those who booked a private dining room could still order meat.\u00a0<\/p>\n<p>\u201cThe mistake we all make is [we think] we\u2019re going to break down the barriers and be successful right away and for chef Humm he\u2019s kind of starting over,\u201d Amanda Cohen, the chef at noted downtown vegetarian restaurant Dirt Candy, told The Post. \u201cIt really is sort of a total re-brand. It would be like if I decided to open an all-meat restaurant,\u201d she said. Cohen noted that she\u2019s had an uptick in EMP employees coming in to \u201ccheck out the competition.\u201d She admires Humm\u2019s bold moves, saying \u201cI\u2019m most impressed that he stuck to his guns.\u201d\u00a0<\/p>\n<p>But some aren\u2019t so impressed and think it\u2019s a misfire.\u00a0<\/p>\n<p>\u201cThere is a way to eat meat the right way and to actually regenerate the Earth and respect the animal you\u2019re raising,\u201d said Ariane Daguin, founder and CEO of D\u2019Artagnan, who provided natural, organic poultry and free-range meat and foie gras to EMP for years. \u201cI feel let down.\u201d<\/p>\n<p>A second anonymous food world insider also claimed that Humm still eats animal products. (It\u2019s been <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/www.eater.com\/2019\/7\/29\/20746152\/eleven-madison-park-daniel-humm-will-guidara-split-end-of-an-era\">previously reported that Humm\u2019s diet is 90 percent vegetarian<\/a>.) An email sent to potential customers March 31, announcing the reservation book\u2019s openings for May, was filled with cutesy jokes and a hint of desperation.\u00a0<\/p>\n<p>\u201cThere\u2019s a lot of pushback and it\u2019s pretty impressive that he\u2019s given up all these deals to stick to his ideals,\u201d said Cohen. \u201cThat\u2019s a lot of money and a lot of resources and a lot of movement for his company that he\u2019s not going to have.\u201d<\/p>\n<p>Those who have and do work with Humm say he\u2019s not one to quit.<\/p>\n<p>\u201cIf his heart is in a plant-based future then he\u2019s going to go after it 100%,\u201d said former EMP executive sous chef Bryce Shuman. \u201cHe\u2019s not a person who does things really half way.\u201d<\/p>\n<p>But his determination might not be enough to make a $335 plant-based vegan menu hot.\u00a0<\/p>\n<p>\u201cThere\u2019s doubt in the culinary world of whether he can make the kind of food that pops for a mass audience or whether he even f \u2013 \u2013 king cares at all,\u201d the restaurant world insider said. \u201cA lot of people don\u2019t think he\u2019s really with it in terms of keeping up with how it is that people want to eat.\u201d\u00a0\n                        <\/p><\/div>\n<blockquote><p><strong><span style=\"color: #ff6600;\">If you liked the article, do not forget to share it with your friends.
