As its crown logo proclaims, the local chainlet, which has three locations in Manhattan, is <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/rayspizza.com\/\">the king of pies<\/a>, the imperatore of all New York street food.<\/p>\n<p>The Big <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">App<\/a>le is full of vaunted pizzerias,\u00a0such as <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/unapizza.com\/\">Una Pizza Napoletana<\/a>, which just reopened to a blizzard of hype on the Lower East Side after a two-year hiatus.\u00a0\u201cBig cheese foodies\u201d and celebrities stampeded the Orchard Street spot at its launch, <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/pagesix.com\/2022\/03\/03\/foodies-celebrate-reopening-of-una-pizza-napoletana\/\">Page Six reported<\/a>.<\/p>\n<p>I wonder how many sprang for a $750 tasting menu for four. A pizza tasting menu? Well Una Pizza Napoletana\u2019s dough is \u201cnaturally leavened!<\/p>\n<p>For me, good ol\u2019 Ray\u2019s reigns supreme. Its gooey, cheesy, messy $3.50 slice laughs at pricier, pretentious mutations.<\/p>\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" loading=\"lazy\" width=\"1024\" height=\"682\" src=\"https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2022\/04\/rays-pizza-cuozzo-10.jpg?w=1024\" alt=\"Ray's\" class=\"wp-image-21918714\" srcset=\"https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2022\/04\/rays-pizza-cuozzo-10.jpg?quality=75&amp;strip=all&amp;w=1535 1536w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2022\/04\/rays-pizza-cuozzo-10.jpg?quality=75&amp;strip=all 1024w, https:\/\/nypost.com\/wp-content\/uploads\/sites\/2\/2022\/04\/rays-pizza-cuozzo-10.jpg?quality=75&amp;strip=all&amp;w=512 512w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\"\/><figcaption>Ray\u2019s has three locations in Manhattan, including one in Times Square. <\/figcaption><figcaption><span class=\"credit\">Zach Feldman\/NY Post<\/span><\/figcaption><\/figure>\n<p>Sure, it\u2019s the butt of jokes. \u201cSeinfeld\u201d and \u201cElf\u201d ridiculed\u00a0its convoluted history and the scores of joints that hijacked the name \u201cRay\u2019s,\u201d all claiming to be the real thing.<\/p>\n<p>And yes, I almost feel guilty professing my love\u00a0for Ray\u2019s \u201cregular cheese\u201d slice. Its ingredients are culinary blasphemy in today\u2019s everything-artisanal environment. The dough does not profess to be naturally leavened for three weeks in a temperature-controlled room with Mozart and nature documentaries. The sauce is not made from jet-setting tomatoes with houses in California and Southern Italy. The parmesan cheese \u2014 the only cheese on the entry-level slice \u2014 does not have a captivating origin story, nor do the basic olive oil and garlic that round out the simple ingredient list. (I have no use for peppers, pepperoni or pineapple, thank you).<\/p>\n<p>The primitive pie\u00a0isn\u2019t fired over coal or wood but baked in a commercial\u00a0gas oven. I never loved the square, Sicilian-style article\u00a0that\u2019s often an exercise in crust-busting. I don\u2019t need Paulie Gee\u2019s hot-honey drizzle, Two Boots\u2019 cornmeal-crusted bottom or Artichoke Basille\u2019s artichoke dip vessel masquerading as pizza.<\/p>\n<p>My first bite of Ray\u2019s triangular slice is a taste of heaven.\u00a0Its elements, which I spice\u00a0with light sprinklings of no-name garlic powder, oregano and red-pepper flakes, fuse into an orgasmic burst of pleasure every time.\u00a0No other mouth-feel compares. They want \u201cauthenticity\u201d even though Italians endlessly squabble over what it means. They want ovens made from volcanic salt, sand and rock from Mount Vesuvius. They demand \u201cartisanal,\u201d 00-grade flour from upstate; tomatoes from San Marzano; and cheeses from far-flung corners of Italy.<\/p>\n<p>They chase every\u00a0mutant form \u2014 deep-dish \u201cChicago-style,\u201d caramelized Detroit-style, Midwestern (whatever it means) and even Canadian (maple syrup, if you ask).<\/p>\n<p>And the fancy optics! See Motorino\u2019s blistered crust! See Rubirosa\u2019s scary squiggle of green basil they call \u201cTie-Dye!\u201d<\/p>\n<p>It\u2019s spring. It\u2019s Ray\u2019s season. I can\u2019t wait for my next bubbling, crackling slice to devour on the teeming sidewalk.
