{"id":569462,"date":"2023-04-08T16:27:29","date_gmt":"2023-04-08T13:27:29","guid":{"rendered":"https:\/\/en.buradabiliyorum.com\/virtual-kitchens-boom-on-delivery-apps\/"},"modified":"2023-04-08T16:27:29","modified_gmt":"2023-04-08T13:27:29","slug":"virtual-kitchens-boom-on-delivery-apps","status":"publish","type":"post","link":"https:\/\/buradabiliyorum.com\/en\/virtual-kitchens-boom-on-delivery-apps\/","title":{"rendered":"#Virtual kitchens boom on delivery apps"},"content":{"rendered":"<div>\n<p class=\"\">While these <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/www.nber.org\/digest\/gauging-value-online-restaurant-listing\">online listings drive business revenue through exposure<\/a> and often bring in new customers, experts warn that unoriginal listings can crowd the dining landscape.<\/p>\n<p class=\"\">The prevalence of virtual restaurants varied among the cities analyzed, ranging from 1 in every 10 in Cleveland to nearly 1 in every 3 restaurants in Nashville, Tennessee.<\/p>\n<p class=\"\">This data comes from a sample of restaurant listings on Uber Eats\u2019 platform, drawing from listings shown under each of the platform\u2019s cuisine categories \u2014 fast food, ice cream, barbecue \u2014 for a given city.\u00a0<\/p>\n<p class=\"\">Uber declined to comment when asked if the numbers in NBC <a href=\"https:\/\/buradabiliyorum.com\/en\/category\/news\/\" data-internallinksmanager029f6b8e52c=\"2\" title=\"News\" target=\"_blank\" rel=\"noopener\">News<\/a>\u2019 analysis align with Uber\u2019s internal metrics.<\/p>\n<section class=\"embed-widget embedWidget embed-widget--medium\"><\/section>\n<p class=\"\">According to one restaurant owner, the motivation for opening virtual restaurants whittles down to economics.\u00a0<\/p>\n<p class=\"\">Rich, the owner of Spinners Pizza on Bleecker Street in Manhattan, operates more than 60 virtual brands across Uber Eats, DoorDash, Grubhub, Menufy, Seamless, Slice and Too Good to Go. Rich asked that his last name not be published, citing threats from customers and competitors about his virtual kitchens, and said that the multiple listings are what keeps his business afloat.<\/p>\n<p class=\"\">\u201cIt\u2019s supposed to be the best street in the world for pizza,\u201d Rich said. But that\u2019s only on Friday and Saturday nights, and, he said, \u201cthe rest of the week isn\u2019t enough to support the rent, the workers, the electric.\u201d\u00a0<\/p>\n<p class=\"\">During a reporter\u2019s visit on a Thursday night in March, fewer than five customers set foot inside Spinners.<\/p>\n<p class=\"\">As a restaurant owner, Rich is part of an industry with 5% profit margins and where <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/restaurant.org\/research-and-media\/research\/economists-notebook\/analysis-commentary\/bottom-line-impact-of-rising-costs-for-restaurants\/\">nearly 9 in 10 operators say they are less profitable than they were pre-pandemic<\/a>, according to the National Restaurant Association.\u00a0<\/p>\n<p class=\"\">For restaurants, <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/www.nber.org\/papers\/w30810\">how visible these online listings are can lead to a 5% increase in revenue<\/a>, said Abhishek Nagaraj, an associate professor in the Haas Business School at the University of California, Berkeley, who specializes in the digital economy.\u00a0<\/p>\n<p class=\"\">Rich\u2019s virtual brands operate under names such as Paulie\u2019s Pizza and New York Thin Crust Pizza. These eateries exist only on the internet and the majority, like Spinners, serve pizza.\u00a0<\/p>\n<p class=\"\">While these additional listings can bring in new customers, Nagaraj said that restaurateurs with dozens of listings can also take customers from other businesses. Rich said one of his virtual brands has a name that\u2019s very similar to a nearby brick-and-mortar competitor, which has prompted angry calls from confused customers.<\/p>\n<p class=\"\">Virtual restaurants are a boon to businesses that are \u201cstruggling in some kind of way,\u201d said David Henkes, a senior consultant at Technomic, a business-focused market research company that specializes in the food service industry. Customers of delivery platforms tend to prioritize cost and speed, both of which are easier to provide than a one-of-a-kind in-person experience.\u00a0<\/p>\n<p class=\"\">Virtual brand identities are easier to shape, which provides advantages, Henkes said.<\/p>\n<p class=\"\">Rich found that people were ordering from his virtual restaurants based on name alone. \u201cYou know, I want pepperoni pizza,\u201d he said. \u201cWow, Pepperoniville, they must specialize in pepperoni. Let\u2019s do that.\u201d\u00a0<\/p>\n<p class=\"\">\u201cIf they like the name, they order.\u201d\u00a0<\/p>\n<p class=\"\">Sn<a href=\"https:\/\/buradabiliyorum.com\/en\/category\/download-scripts-themes-apps\/\" data-internallinksmanager029f6b8e52c=\"9\" title=\"Download Scripts &amp; Themes &amp; Apps\" target=\"_blank\" rel=\"noopener\">app<\/a>y names and convenience helped convince Ryan Benson, a marketer who lives in Los Angeles\u2019 Sherman Oaks neighborhood, to order from The Meltdown.\u00a0<\/p>\n<p class=\"\">\u201cIt was called the Giddy Up Melt and had things like burnt brisket tips; it sounded like a premium hipster joint,\u201d Benson, 25, said. \u201cI thought it was a hole-in-the-wall diner or a food truck that was selling on an app. I was not envisioning a Denny\u2019s.\u201d<\/p>\n<p class=\"\">In fact, the sandwich so enamored Benson that he only discovered the restaurant\u2019s true identity after he made plans to eat there in person. While putting together a Yelp list of his favorite restaurants, Benson couldn\u2019t find The Meltdown, so he searched the address from the app and was startled to see Denny\u2019s listed there.\u00a0<\/p>\n<p class=\"\">\u201cI feel like I got catfished by my sandwich \u2014 everything I knew was a lie,\u201d Benson said.<\/p>\n<p class=\"\">\u201c[Virtual restaurants are] stealing attention from what I thought was a new or locally owned business,\u201d Benson added. \u201cIt\u2019s almost like they\u2019re masquerading as a new small business \u2014 is this ethical?\u201d\u00a0<\/p>\n<p class=\"\">When asked for comment, a Denny\u2019s spokesperson said the company \u201cprioritized transparency\u201d and disclosed its connection with The Meltdown on the virtual resturant\u2019s  <a rel=\"nofollow noopener\" target=\"_blank\" href=\"https:\/\/themeltdown.com\/about-us\/\">About Us page<\/a>. The spokesperson also noted, however, that individual partners choose what to display on their page and can opt not to show the \u201chosted by Denny\u2019s\u201d messaging.<\/p>\n<p class=\"\">From Benson\u2019s perspective, there are other issues with virtual restaurants: \u201cDo they have their own kitchen ratings, health ratings?\u201d\u00a0<\/p>\n<p class=\"\">His concern is not unwarranted: An address on Hudson Street in Manhattan is associated with nine different virtual restaurants, including Baozilla NYC and Chopped Cheese Factory, but searches on the New York City Department of Health and Mental Hygiene\u2019s website for all nine restaurants at that address returned zero results.<\/p>\n<p class=\"\">A call to the business revealed that its physical dine-in location is neither a Baozilla nor a Chopped Cheese, but instead a small deli selling packaged snacks and a variety of prepared foods. In early March, the New York City Department of Health and Mental Hygiene issued the deli inspection violations for \u201cfilth flies\u201d as well as \u201cconditions conducive to rodents, insects, or other pests.\u201d A worker at the store didn\u2019t answer repeated questions about health inspections.<\/p>\n<p class=\"\">Nagaraj suggested that these additional identities, while potentially offering positive paths to reinvention, might also offer a restaurant a way to avoid accountability. \u201cIf you kill a [virtual] restaurant and start a new one with a new name, what do identity and reputation mean?\u201d Nagaraj said.<\/p>\n<p class=\"\">These questions are driving delivery platforms to think carefully about their engagement with virtual restaurants.\u00a0<\/p>\n<p class=\"\">On DoorDash, virtual restaurants are labeled and customers can access details about the physical location of the kitchen. Virtual brands are required to maintain documentation of their compliance with local health and safety regulations. In December, DoorDash also rolled out brand quality guidelines for operators, which emphasize \u201chigh-quality, differentiated [menu] selection.\u201d\u00a0<\/p>\n<p class=\"\">Uber Eats announced new guidelines for virtual kitchens in late March, tightening requirements and offering restaurants help to improve their listings. These changes include the removal of virtual brands that offer identical or near-identical menu items and increasing the customer rating needed to exist on the platform.\u00a0<\/p>\n<p class=\"\">\u201cThe space has been a wild Wild West,\u201d said John Mullenholz, who heads the virtual kitchens program at Uber Eats. While Mullenholz acknowledged that Uber Eats has been supportive of virtual brands and will continue to be supportive, he characterized the new guidelines as a pivot \u201cfrom quantity to quality.\u201d<\/p>\n<p class=\"\">Those changes \u201ccould be a problem,\u201d Rich said last week. As of Friday he had not heard from Uber Eats.<\/p>\n<p class=\"\">\u201cThat\u2019d be detrimental,\u201d Rich said. \u201cIf they did that, I\u2019d definitely be out of business.<\/p>\n<p class=\"endmark\">\u201cIt\u2019s the only way I can compete.\u201d<\/p>\n<\/div>\n<blockquote><p><strong><span style=\"color: #ff6600;\">If you liked the article, do not forget to share it with your friends.
